Workshop: Gingerbread Cookies at19CulinaryStudio

With all the mixer. 

Nothing better than spend our free time with our loved ones in the season of giving, I had my Holiday Special on last Saturday where I get to bake and decorate gingerbread cookies for Christmas with at19 Culinary Studio and The Butterfly Project Malaysia. Unlike other culinary arts schools, at19 Culinary Studio is a bungalow along Jalan Dungun, Damansara Heights and has its own home-kitchen environment where you can learn or improve your culinary skills.

This is the simple yet useful kitchen.

With the helping of Ms Angelin, Ms Hellen Fong (the founder of at19 Culinary Studio) was explaining to us the basic dos and don'ts in the kitchen and the ingredients of baking and decorating the gingerbread cookies. Sixteen of us split into four groups (4 person in a group) by Ms Suraiya (chef-of-the-day), we will have four pieces of gingerbread cookies each after this as the recipe below is enough to bake 12- 16 giant size of gingerbread cookies. Ingredients of making the dough of Gingerbread Cookies!

Ingredients of making the Gingerbread Dough
- Unsalted Butter (115 g, chilled and diced)
- Brown Sugar (175 g)
- Egg (1 nos.)
- Black Treacle (2 tbsp)
- Plain Flour (350 g)
- Ground Ginger (1 tsp)
- Bicarbonate Soda (1 tsp)
- Vanilla Essence (1 tsp)

Ingredients of making the Royal Icing
- Icing Sugar (250 g)
- Egg White (1/2 nos.)
- Lemon Juice (1/2 tsp)
- Glycerin (1/2 tsp)

For extra decoration
- Gummies (30 g)
- Silver Dragees (10 g)
- Candies/ Chocolate Buttons (40 g)


1st step : Filter the flour and other ingredients.


2nd step : Mix them till resemble fine breadcrumbs.

3rd step : Add brown sugar, egg, vanilla essence, black treacle to form a dough after that.

You can see the dough clearly now.

4th Step : Shape into a ball.

5th Step : Roll out the dough and cut out using people-shaped cutters.
*Alright, I admit that I put too much of flour already!

Let's see the clearer step-by-step recipe now.
1. Preheat the oven to 180ºC. Grease three baking sheets.
2. Mix flour, bicarbonate soda, ginger, and diced butter till resemble fine breadcrumbs.
3. Add sugar, egg, black treacle, and vanilla essence to form a dough.
4. Turn out on to a floured surface and knead until smooth. Shape into a ball, wrap in clear film (plastic wrap) and chill for 10 minutes.
5. Roll out the dough and cut out using the people-shaped cutters.
6. Bake cookies for about 12- 15 minutes (or) pale golden.
7. To make royal icing: Beat egg white with lemon juice and glycerin, gently add in icing sugar, batch by batch till you get a soft thick paste.
8. Decorate your gingerbread cookies with candies, chocolate buttons, or royal icing.
9. You are done and let it set!


Bake for about 12- 15 minutes then the cookies are done!

Not only look cute, but also delicious!

Extra tips:
1. We are using SCS unsalted butter, all purpose flour and Grade A Eggs.
2. Brown sugar gives the caramel taste, but you can use white sugar if you like the sweeter cookies.
3. Black Treacle used as a sweetener.
4. Put some flour on the baking paper before you roll it to prevent the stickiness of the dough.
5. Roll out the dough with the same thickness (about 5mm), can't be too thick or too thin.
6. Remember to observe them always, to see whether they are already pale golden in the oven.

Baking class is FUN to attend! The feeling of baking your own gingerbread cookies is quite satisfied and funny especially when you do this with your loved ones. The recipe is not just for Christmas, you can bake it all year round!
